Sweet Blackberry Chicken:
Ingredients:
4 chicken leg quarters or 1 whole chicken, rinsed and patted dry
Salt/pepper to taste
1 cup seedless blackberry jam
1/4 cup apple juice
1/8 cup soy sauce
1 teaspoon rosemary, chopped finely
2 cloves garlic, finely minced
Materials:
1 large glass baking dish or metal roasting pan
1 medium , microwave safe bowl
aluminum foil, nonstick
Preheat oven to 350. Take the chicken and season to taste with salt and pepper. Grease your baking dish of choice and set the chicken inside. For the sauce, combine the jam, juice, and soy sauce in the bowl and microwave for about 30 seconds. Remove from the microwave and stir until a smooth consistency is achieved. Add in the rosemary and garlic, then pour over the chicken. Bake, tightly covered, for an hour and a half, or until the meat next to the bone is completely cooked. Remove from heat and allow to sit, uncovered, for ten to fifteen minutes for the juices to set before carving. Pairs well when served with broccoli and dark green vegetables.
Savory Pork Loin
Ingredients:
1 packages unseasoned pork loin
Rub:
1/2 cup finely chopped herbs: rosemary, thyme, oregano, savory, sage
1/8 cup salt
1/8 cup pepper
Zest of 1 lemon and 1 orange
Juice of 1/2 orange
1/4 cup olive oil
Materials:
1 large roasting pan
1 medium sized bowl
Preheat the oven to 325. Grease the large roasting pan and place the pork within, fatty side up. In the bowl, mix the herbs, salt, pepper, citrus, and oil thoroughly. Apply to the pork evenly, then cover the pan tightly. Bake for roughly an hour and half, or until the meat reaches 165-170 degrees F.
